In our small shop in Torvehallerne Copenhagen right next to Nørreport Station, our committed employees are ready to give advice and guidance on our many knives. We carry everything from large, reputable manufacturers such as KAI and MAC, to the very small family forges that in their typically small workshops produce the best knives you can possibly get.

We are also happy to sharpen your knives, and with us it takes place in peace and quiet on a wet stone, so that the sharpening is as gentle to your knife as possible. It takes a little time - in return, your knife will last much longer.
We will sharpen your knives
If your knives need a loving hand, you can take them to our shop in Torvehallerne Copenhagen. We make sure to have the knives ready for collection within 24 hours - if you come from a long way, we are also happy to send them back.
A sharpening costs DKK 70. per knife, and we grind on wet stone that rotates slowly. This ensures that the knife does not get too hot during the process, and it also means that we do not remove more steel than absolutely necessary.
A knife is not just a knife
- and that's why you should have the knife in your hands and try it before you make your decision.
You can read a lot on the internet about different knives and the manufacturers behind them, but you can never really know how the individual knife feels exactly for you.
The cornerstone of the way we advise on knives is therefore that you can always get the knife in your hand and try cutting with it in our shop, and thus get a good sense of whether the knife has the right comfort, weight, thickness, cutting properties a et cetera.
This also means that you get a unique opportunity to compare knives from different manufacturers directly against each other.
One of the legends
Among Fujii's absolute best is this 210mm three-layer chef's knife with aogami-2 (Blue-2) core
The profile of the knife is the classic gyoto, which is the cornerstone of any knife collection. This knife is distinguished by its particularly thin profile, which in combination with the core of blue steel provides a very light cutting experience, which is rarely found in similar knives of this type.
This knife is forged in three layers, with the core on each side coated with a soft layer of stainless steel. The steel in the core, aogami-2, is one of the classic Japanese alloys characterized by a high carbon content, iron and a little chromium. You should therefore expect that the core steel of this knife will rust.
The handle is made of stained mahogany and the knife generally feels light - precisely because of the modest thickness.

As with all our kitchen knives, we strongly advise against cutting into all kinds of bones and frozen goods. If you are in doubt as to whether an object is too hard for the knife, you should refrain from cutting it. This knife is particularly sensitive to "chipping" as it is very hard and thin.
