K Sabatier
Over time, Sabatier has become a name that stands for some very iconic knives that are very well known here in Europe. However, Sabatier is not just Sabatier - it is somewhat the same story as with Laguiole. There are many manufacturers who produce quite different knives that do not bear many similarities other than the name.
We have long wanted to sell the original Sabatier knives in carbon steel, and after some research and a trip to the south of France, from November 2017 we managed to get the right Sabatier knives home - namely carbon steel knives from K Sabatier in Thiers.
K Sabatier started way back in 1810, and it is the original type from that time that we have chosen to include in the range. They are carbon steel knives, which means they rust. This is what you would typically associate with an "iron knife" in Denmark, although that name is a bit misleading, because it is all steel, and in a Japanese context it is probably most reminiscent of shirogami - the white steel. The knives in K Sabatier's original carbon steel are easy to maintain, as carbon steel is quite easy to iron up or to sharpen yourself.
We also have antique models in stock - ie. knives produced before 1960. You can see them if you visit us in our shop in Torvehallerne in Copenhagen.
