Description & specifications

In Seki City is the knife manufacturer Sankurafuto (Suncraft). Since 1959, Suncraft has therefore had knife production underway, and since then has delivered some cool knives in both the East and the West.

The Senzo Professional series from Suncraft may look simple, but the cutting ability of these knives should not be underestimated. We would probably think that in terms of pure performance, these knives are some of the best we have for the price.

The knife here is a 165mm Bunka made in 3 layers, with respectively AUS 10 in the core and 2 stainless outer layers. AUS 10 is a good stainless steel type that has the characteristics of being easy to maintain, staying sharp for a long time, and easy to sharpen.

The handle is a western-style handle made of pakka wood.

  • Sankurafuto (Seki, Japan)
  • AUS 10
  • HRC 59-60
  • Stainless steel
  • Western-style stock (WA)

Foodgear always advises against cutting all kinds of bones and frozen goods. Knives must not be washed in a dishwasher, as this removes sharpness and provokes rust - even in stainless alloys!

Maintenance & use

Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.

Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
