The HORL® sharpening system is designed to help you sharpen your knives easily and quickly by holding the angle for you, at either 15 or 20 degrees. The coarse diamond side quickly removes material and creates a new edge, while the finer ceramic disc polishes away the rough scratches, leaving a fine and sharp edge.
Foodgear recommends sharpening your knives with 1 layer of steel, at a 20-degree angle as the steel is a bit softer. Japanese knives with a hard core steel should be sharpened at 15 degrees.
Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
