From Konosuke in Sakai, we have here something of a rarity: an HD2 Sujihiki with western-style handle in white corian.

The knife is of the usual high quality and finish that you expect from Konosuke, and the western style makes the knife just a little heavier than with a WA handle, but without compromising on the cutting properties - the blade is as thin as you want. expect from an HD2er.

The sujihiki is used as a trenching knife/slicing knife. HD2 steel is considered to be semi-stainless, which should be interpreted as meaning that it does not patina as easily as blue and white steel - but, like all other (stainless) steel, it can still patina.

This knife must never be put in the dishwasher as it will damage both the blade and the handle. You must also refrain from cutting very hard objects - especially bones, cartilage and frozen objects.
