Konosuke Fujiyama Kaiju 240mm Gyuto - White #1

Probably the rarest and most sought after knife we ​​have ever had in the shop.

The Fujiyama from Konosuke has seen a lot of development over the years. When they first launched in 2006, the owner of Konosuke, Kosuke Kawamura went out knocking on the doors of various craftsmen in Sakai, Japan and shared his vision to build what he believed would be the ultimate knife. After many knockdowns, he finds the now legendary blacksmith Yoshikazu Tanaka, and the highly recognized grinder, Morihiro. Together they create what will become a cornerstone of Japanese knives, the first Fujiyama.

Kaiju is Konosuke's answer to a 'workhorse' style gyuto. Forged by Tanaka-san in White 1, and is then sent to the one who now sharpens the Fujiyamas, namely Naohito Myojin, who gives the knife his fantastic grind, and first 'rough' sharpening.

After the knife has passed Tanaka-san and Myojin, Ivan The Sharpener gets his hands on it. He spends an incredibly long time giving the knife its final polish and finding the kasumi. The process at Ivan involves, among other things, to remove all the low spots the knife now has, and hand polish the incredibly beautiful kasumi finish on the knife. A cheeky detail is that you get 3 small finger stones, from the same natural stone Ivan has used for polishing, so that you can create and hold the knife's unique kasumi yourself.

We must say that we are extremely honored and proud to be the only shop in Europe to be allowed to sell this true unicorn of a knife.

Foodgear always advises against cutting all kinds of bones and frozen goods. Knives must not be washed in a dishwasher, as this removes sharpness and provokes rust - even in stainless alloys!
