Hatsukokoro

Hatsukokoro is one of the most versatile producers in our range – and one that over time has built a large and loyal following. The knives are produced in Japan by skilled craftspeople, and the selection spans broadly: from more budget-friendly models in stainless steel to advanced versions in aogami, shirogami and powder steels such as SG2.

What defines Hatsukokoro is consistently high finish quality. Whether it is a polished migaki finish, a rustic kurouchi or a complex Damascus pattern, the execution is always precise. The knives typically come with elegant wa-handles in wood species such as chestnut, oak and ebony.

At Foodgear we stock a wide range of Hatsukokoro knives across many of the popular knife types – gyuto, bunka, nakiri, sujihiki and petty. This makes it possible to build a complete set from a single producer, or supplement an existing collection with a Hatsukokoro favourite.

If you are curious about Hatsukokoro, you are very welcome to visit us in Torvehallerne, where we always have a selection ready to try in hand.
