Therese

CEO & Owner

Therese is co-founder, owner and boss lady at Foodgear. She grew up with entrepreneur parents, so to her it comes naturally: if something is missing, you build it.

She met Tommy in 2009, and together they opened the shop in Torvehallerne in 2011. Since then Foodgear has grown into the specialist shop it is today.

In 2023 her husband Tommy died suddenly of cardiac arrest. In the middle of her grief, Therese experienced how much is missing when you lose someone without warning, especially when there are children. Among other things, this led to a citizens' proposal, later adopted, for bereavement leave for parents with children under 18 living at home, and to a children's book about suddenly losing a parent, which she wrote and illustrated herself.

Alongside Foodgear, Therese draws and paints, and she can find a song for every occasion. She has been in kitchens since she was 2 years old and loves helping people find the right knife, the right feel in the hand and the right steel for the cooking they actually do.

Mikael

Shop, steel nerd, sharpening nerd, natural stone nerd

Mikael sees his work as a craft and doesn't stop until he is satisfied with it himself. He loves to geek out, dig deep, try something new and push himself to get better.

He is a trained chef, has worked in kitchens on and off for 8 years and holds a bachelor's degree in nutrition and health. At Foodgear he is in charge of buying knives and equipment, single bevel sharpening, restoration, polishing, special jobs and knife handles.

Good tools matter to Mikael, so he can do the job as well as possible. He also likes the thought that his craft helps others, especially chefs, do their work better and more easily.

When he isn't working, he trains, plays American football and geeks out on wine, food, heavy metal and all things Japanese.

Alexandre "Sasha"

Shop, fixer, maker, sharpener, tool nerd

Sasha is detail-oriented and likes to fuss over things and make them as good as they can be. He loves to geek out and learn new methods, whether it's sharpening, polishing, handicraft, jewelry making or woodwork.

He has always been interested in cooking and sharp things, and as a child he often helped out in the kitchen. So working at Foodgear is a pretty good match.

At Foodgear he is a bit of a jack of all trades. He helps customers find the right knife, sharpens and restores, runs sharpening courses and makes custom handles for people who want something truly unique. He also handles buying whetstones and practical things for the shop.

When he is not at work, he hangs out with his partner and friends, plays computer games and geeks out as an amateur silversmith.

Troels

Troels

Shop, sharpening, keeps the mood good, ideas man, steel nerd

Troels cares about good service and about matching people with the right knife. Not just something that is good, but something that suits you and the way you cook.

He is a trained chef and finished his apprenticeship in 2022, partly at Restaurant Barr. It was during his apprenticeship that his interest in Japanese knives really took hold, when he discovered how much proper tools matter in a kitchen.

Today he helps customers in the shop, sharpens knives, runs sharpening courses and takes part in some of the buying. His way of helping is simple: what will the knife be used for, should it be able to develop a patina or be stainless, and what is the budget? Then he finds a few good options you can try in your hand.

When he is not in the shop, he is often at the gym, in the kitchen or busy making homemade kimchi.

Kasper

Kasper

Operations, Webshop, "Hackerman"

Kasper is responsible for online sales at Foodgear and makes sure everything on the operations side runs smoothly.

He likes it when a business runs like a well-oiled machine with the right systems and the right partners, and he always thinks there is something that can be optimized.

He keeps a constant focus on the customer experience and on making it easier to shop at Foodgear, both in the shop and online. For him it is often about the small things that together make a big difference.

When he isn't working, he plays and listens to music, especially Radiohead, spends time with friends and goes running.

Tommy

Founder of Foodgear


Tommy founded Foodgear in 2009. It began with his idea, his passion and his great love of good craftsmanship, good food and proper, well-made things to enjoy in everyday life.

In 2011 he and Therese opened the shop in Torvehallerne. What they built together was not just a shop, but a place with warmth, personal service and a genuine joy in sharing knowledge and helping people find the right tools.

Foodgear started out broad, but together Tommy and Therese found what was to be the heart of the shop: Japanese kitchen knives.

In 2023 Tommy died suddenly of cardiac arrest. He is greatly missed. But he is still deeply present at Foodgear, in its spirit, in its values and in everything the shop is built on.
