We're pretty excited about our K Sabatier filleting knives in carbon steel. In the video here you can see how Tommy quickly cuts the fillet of a mackerel with a 20 cm Filet de Sole . The carbon steel in the knife is relatively soft and it can rust. This allows the knife to be sharpened even very finely compared to similar stainless knives, and it is, we think, just much more fun to work with.
