Yoshimi Kato is a highly recognized blacksmith from Echizen, Japan. After being apprenticed to his father-in-law, Hiroshi Kato, who also trained blacksmiths such as Yu Kurosaki, he now stands at the front of the forge, which belongs to the iconic Takefu Knife Village.

Yoshimi-san is known for hardening steel exceptionally well, and for his knives, which are beyond the usual beautiful, especially his damask cladding, we think they are some of the absolute best you can find.

This knife is a 240mm Gyuto with Aogami Super (Blue Super) as core steel, surrounded by a beautiful kurouchi on the top of the blade, and Yoshimi-san's incredibly beautiful Damascus cladding further down towards the egg. The stock is custom western-style made of maple knot.

As mentioned, the core steel is aogami super. Aogami is the category of so-called blue steel, and "Super" is the hardest of these alloys. For the same reason, it is not a knife you should take chances with by cutting excessively hard objects. Bones/, bones, cartilage, frozen items etc. is of course banned.
