Yoshikane Hamono is a relatively small workshop located in Sanjo, Niigata. With over 100 years of experience, this small company has truly made a name for itself, producing some exceptionally good knives. Under the leadership of Kazuomi Yamamoto, they create some of the best cutting knives in the game.
This knife features a three-layer steel with a core of SKD11. It is therefore a fairly hard blade with high potential for sharpness, and is a semi-stainless alloy. This means that the edge may develop a bit of patina but is difficult to rust. The two outer layers are stainless.

Like all other good Japanese knives, this knife should not be machine washed, and since the blade is not completely stainless, we recommend that you be very careful to rinse and dry the blade quickly after use, as it will otherwise begin to oxidize.
