In Seki City is the knife manufacturer Sankurafuto (Suncraft). Since 1959, Suncraft has therefore had knife production underway, and since then has delivered some cool knives in both the East and the West.
The Senzo Professional series from Suncraft may look simple, but the cutting ability of these knives should not be underestimated. We would probably think that in terms of pure performance, these knives are some of the best we have for the price.
The knife here is a 170mm fillet knife made in 1 layer AUS 10.
AUS 10 is a good stainless steel type that has the characteristics of being easy to maintain, staying sharp for a long time, and easy to sharpen.
The handle is a western-style handle made of pakka wood.

Foodgear always advises against cutting all kinds of bones and frozen goods. Knives must not be washed in a dishwasher, as this removes sharpness and provokes rust - even in stainless alloys!
