Masamoto Tsukiji from Tokyo has been in the knife business since 1845, and is a 'go-to' dealer for many chefs and private individuals, in the vicinity of the Tsukiji market.
This knife is made in V1, a carbon steel type from Takefu Knife Village that most of all resembles white steel (shirogami).
