The Gekko series is hand forged in 3 layers - VGXEOS at the core and soft stainless on the outside.
VGXEOS is a new steel that is very similar to HAP40. It can be hardened hard so that the knife stays sharp for a long time, and it is rust-free.
This knife is a gyuto , which is also popularly just called a chef's knife. This is 21 cm, and it is used for most tasks in the kitchen and is particularly good for slicing and chopping tasks in both meat and vegetables.
