Shoichi Hashimoto is known as the best damask artist in Japan. He started moving towards kitchen knives a little over 3 years ago and has managed to incorporate his artistic skills into the forging process of his knives. All his knives are "One Of a Kind" and are all something very special.

It is built as a single-layer knife, where the individual layer consists of 2 different types of steel folded together that extends all the way from the back to the cutting edge, and in this case it is Blue #2 (Aogami) and White # 2 (Shirogami). In short, both the cladding and the core steel are the same.

After the forging process at Hashimoto-san, it goes to the highly recognized sharpener, Naohito Myojin, who works his magic on the blade. Also note the cheeky detail that the tang is engraved with name, number and date.

Comes without a handle, but with the purchase of the knife you get an optional handle, also a custom handle if you wish.

Foodgear always advises against cutting all kinds of bones and frozen goods. Knives must not be washed in a dishwasher, as this removes sharpness and provokes rust - even in stainless alloys!
