Sakai Kikumori has been making knives since 1926, and since then they have become known as a top brand from Sakai. They work together with some incredibly skilled blacksmiths and grinders who, in collaboration, create some fantastic products.
The Kikuziki series is forged by the legendary Yoshikazu Tanaka, who is recognized as one of the best, if not the best blacksmith in Sakai. It is built in 3 layers with Hvidt #2 in the core and a stainless cladding.
It has a very nice and rustic kurouchi finish on the top of the blade, and further down a very nice grind starts, which makes the knife very thin behind the egg, and therefore has a fantastic cutting ability.
The chef's knife here is a classic all-round work tool for chopping and slicing both meat and vegetables, and it is an absolute pleasure to work with.
