Tourner knife of 9 cm from K Sabatier

The tourner knife is used to cut workpieces directly in the hands. The curved blade, which is also called bird's beak, means that you can press a subject such as e.g. a carrot or mushroom directly against the cutting edge with your thumb, where you don't want to cut your finger despite putting pressure on the cutting edge. It can be very useful if you e.g. need to prepare a lot of mushrooms or if you want to cut things directly over the pan in a stew.

The knives we have chosen to carry from K Sabatier are all with carbon steel blades. That is, steel where the primary components are iron and carbon with the absence of e.g. chromium, nickel and other common alloying elements. This partly causes the knife to rust, but it also means that the knife can be sharpened very finely, thus becoming sharper and cutting better.
