Set containing Naniwa Professional stone #600 and Combination #2000/#8000
Finding the right sharpening stones can be a bit of a jungle. We ourselves have a very wide selection, and over the years we have formed a good impression of what the various stones can do.
Our talented employee Frederik Lind has selected a set of two stones, which have become our starting point when we grind for our customers ourselves. The set contains a very good coarse stone - namely a grain 600 in the Professional series from Naniwa. This stone removes steel and forms a new egg relatively quickly, which is convenient since it is precisely this part of the grind that typically takes the longest. The stone is coarse enough that it can be used to deburr a knife if it has been damaged.
Once you have formed the new egg on the knife, you then use the combination stone in the set. The stone is a Combination #2000/#8000 stone from Naniwa, which means it has different fineness on each side.
Frederik G. Lind says about the set:
"The 600-grit stone grips really well, without making deep scratches, as very coarse stones often do. Therefore, it is very easy already with the 2000-grit stone to give the knife an adventurous polish and fantastic sharpness even at a relatively low grain density . When you go on to grain 8000, you increase the sharpness to something that you don't get close to with similar stones from the other manufacturers that I have worked with."
Both stones are of the "splash and go" type, which means that they must not be soaked before work. You simply add a little water to the stone, and you can then immediately start grinding. We recommend that you use a holder for your stones - e.g. this model from Naniwa.
