We are proud to present Foodgear's very own knife range. In collaboration with a knife manufacturer from Koichi, Japan who has over 100 years of experience in the trade, we have had these knives made.
We have had 3 series made by them, each of which has been engraved 'フードギア' which is 'Foodgear' in kanji. The kanji is hand-hammered into each individual knife.
This knife is a 180mm Santoku. It has AUS-10 in the core and surrounded with nice damascus cladding and tsuchime finish. This means that the knife is more or less rust-free, and requires minimal care compared to rust.
The handle is a Japanese WA handle, made of chestnut wood.

Foodgear always advises against cutting all kinds of bones and frozen goods. Knives must not be washed in a dishwasher, as this removes sharpness and provokes rust - even in stainless alloys!
