Bunka
The Bunka is a Japanese all-round knife with a distinctive triangular blade and a prominent tip – the so-called reverse tanto profile. It combines the best of the gyuto and nakiri: precision for fine work and enough width to chop and slice vegetables effectively.
With its compact size of typically 160–180 mm, the Bunka is particularly well suited to everyday use in the home kitchen. The tip makes it ideal for detailed work, while the wide blade makes it easy to scoop food from the cutting board.
The ko-bunka is a smaller variant at 110–135 mm – perfect as a nimble all-round knife for fruit, herbs and detail work.
