Description & specifications
HADO Knives is a relatively new player in the game, based in the knife Mecca capital, Sakai, Japan. They have truly made a name for themselves in the market with their incredibly well-crafted knives, forged by some of Sakai's best blacksmiths, including Tanaka, and sharpened by their own talented in-house sharpeners.
This knife is made with VG10 stainless steel in the core & a stainless cladding. They receive the "raw" blade from Takefu Knife Village, and then it is sharpened, polished, and finished at Hado's workshop in Sakai.
The grind is truly well-executed. It is very thin behind the edge and naturally cuts fantastically. The Fit&Finish is as we know from Hado - in other words, superb. Polished spine and choil, beautiful polishing, and a lovely tsuchime finish on top of the blade.
