KAI SHUN

Kai Shun Knives The company KAI Shun is often simply called Shun, which is an allusion to living in balance and harmony.

KAI is family-owned with more than 100 years behind it, and their forge has been located in the city of Seki, west of Tokyo, since its foundation. Seki, together with Kyoto, has for many years been known as the capital of steelwork, and it was, among other things, here, you often found the blacksmiths who forged the best and most beautiful samurai swords.




MAC

MAC is forged in the city of Sakai, Japan. MAC has a long tradition of craftsmanship, dating back to the forging of the old samurai swords. Each and every knife is still hand sharpened and quality checked before leaving production. The MAC knives have a high carbon content, which maintains sharpness, but are also rust-free.

MAC makes many different series of kitchen knives, and here you can get everything from the cheap chef series up to the very expensive honyaki knives. Therefore, many people know about MAC and they are widely known among chefs as their favorite.



Kyocera - Ceramic knives

The knives from Kyocera are made of technical ceramics, which is a high-tech process. A technical ceramic called Zirconia is used. This is pulverized and placed in a mold and pressed at approx. 300 tons. The knife is then tempered in an oven at 1000 degrees Celsius. The knife must then be sharpened, and this takes place in three different rounds, but only by hand.

Moritaka

The " Moritaka " family has a long and proud tradition in Japanese blacksmithing - a tradition that dates back to the year 1293, when Kongouhyoueminamotono Moritake was Master Blacksmith for the Buddhist priest at Mt. Houman in Dazaifu, Fukuoka. His successors continued the tradition of producing swords for the Buddhist priests in the same place for 13 generations.

Konosuke

Konosuke makes traditional Japanese knives for the professional kitchen. The company was started in 1932 by Kenjiro Kawamura and is today run by his grandson and great-grandson – Nobuyuki Kawamura and Kosuke Kawamura. It was a rough start. The company was razed to the ground during the Second World War in 1945, but their drive and pride for the craft meant that they reopened in 1948. The company is located in Sakai – the capital of knifesmiths.

IVO Cutlery

IVO Cutlery is a Portuguese company that specializes in making production knives for e.g. hitters. This means that their knives are cheaper than so many others, but at the same time they are knives that can withstand you using them for many hours without getting blisters or the like.
