Description & specifications

I Seki City, the knife manufacturer Sankurafuto (Suncraft) has been in operation since 1959, delivering some great knives in both the East and the West.

The Retro Series features a more traditional look, with a beautiful, rustic nashiji finish on the top of the blade, and a traditionally octagonal handle.

This knife is a 167mm santoku, with ginsan in the core, and 2 stainless steel outer layers. Ginsan is a stainless steel with many of the same properties as carbon steel, meaning it is easy to sharpen and gets really sharp.

Maintenance & use

Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.

Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
