Description & specifications

Masamoto Sohonten is an incredibly highly respected brand, with over 150 years of experience. Minosuke Matsuzawa - the 1st generation smith under Masamoto, went to Osaka at 17 years old to apprentice. 5 generations later, it is clear that Matsuzawa-san's vision has been carried forward, and one can safely say that Masamoto Sohonten has achieved legendary status in Japanese knives.

The KS-Series is what they are probably most known for. Superb grind that makes the knives extremely thin behind the edge, giving them exceptional cutting performance, and the Fit & Finish is excellent.

The knives are made from a single layer of Shirogami (White Steel) 2, so they take a very fast edge, which can become very biting.

This knife is a Sujihiki at 270mm and is used for slicing meat and fish.

The knife comes with a saya.

Maintenance & use

Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.

Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
