Description & specifications

Masamoto Sohonten is an incredibly highly respected brand, with over 150 years of experience. Minosuke Matsuzawa - the 1st generation blacksmith under Masamoto, went to Osaka at the age of 17 to apprentice. 5 generations later, it's clear that Matsuzawa-san's vision has been carried on, and it's safe to say that Masamoto Sohonten has achieved legendary status in the world of Japanese knives.

The KS-Series is probably what they are best known for. The superb grind makes the knives extremely thin behind the edge, giving them exceptional cutting ability, and the Fit & Finish is outstanding.

The knives are made from a single layer of Shirogami (White Steel) 2, so they take a really fast edge that can become very sharp.

This knife is a 165mm petty and is used for smaller tasks in the kitchen.

The knife comes with a saya.

Maintenance & use

Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.

Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
