HADO Knives is a relatively new player in the game, based in the knife mecca's capital, Sakai, Japan. They have truly made their mark on the market with their incredibly well-crafted knives forged by some of Sakai's best blacksmiths, including Tanaka, and sharpened by their own talented in-house sharpeners.
This particular knife is made with rust-resistant VG10 steel in the core & a stainless cladding. They get the "raw" blade from Takefu Knife Village, and then it is sharpened, polished, and finished at Hado's workshop in Sakai.
The grind is exceptionally well-executed. It is very thin behind the edge and, of course, cuts fantastically. The Fit&Finish is as we know it from Hado - in other words, superb. Polished spine and choil, beautiful polishing, and a lovely tsuchime finish on the top of the blade.

Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
