The Tadafusa Tsuchime 270 mm Sujihiki in SLD is a long-bladed precision knife from Tadafusa in Sanjo, Niigata. The knife's 3-layer SLD construction combines a hard, keen core steel with stainless cladding, giving good cutting performance and improved corrosion resistance. The sujihiki shape is particularly well suited to thin, even slices of fish and meat, where control and minimal friction matter. The 50/50 grind makes the edge symmetrical and easy to maintain, while the walnut and buffalo horn handle offers both comfort and a classic look. Supplied as the knife only — whetstone and sheath are not included.

Use: the sujihiki is intended for thin, precise slices of raw fish and boneless meat. Do not cut bones or frozen goods, as this can damage the blade.
Cleaning: always wash by hand with a mild detergent and warm water. Rinse and dry immediately with a soft cloth to avoid staining and corrosion. The knife must not be washed in a dishwasher.
Storage and handle care: avoid prolonged soaking. Treat wood and horn handles regularly with a thin layer of mineral oil or handle oil to prevent drying out and cracking.
Sharpening: use a whetstone or professional sharpening to preserve the edge. Avoid aggressive sharpening tools that can remove too much material.
Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
