The Sasuke family has been making knives in Sakai since 1867, and are some of the most handmade you can get. In addition to making knives, he is also world-renowned for his bonsai scissors, and is among other things featured in the video on YouTube "Why Bonsai Scissors can cost 26,000 dollars". In the workshop, it is only Sasuske himself and his apprentice who are responsible for all the work. They laminate their own steel, forge it, grind it, and make handles. The sharpening of these knives is also completely unique, as they taper like a samurai sword, where they are thicker at the shinogi and thinner at the back. This gives them a fantastic cutting ability not found in many other knives.

Sasuke's knives are built in 3 layers with Shirogami 2 as core steel, surrounded by soft iron. They are finished with a migaki finish on the top of the blade, and a beautiful kasumi finish on the kireha. The handle is a Japanese handle made of walnut and buffalo horn.

Shirogami 2 or White 2 is a carbon steel, and is in the category of so-called white steel, and Shirogami 2 is the second hardest of these alloys. Shirogami 2 is among the purest carbon steels from Japan, and for this reason it can be incredibly sharp, and is very easy to sharpen.

The knife here is a so-called utility knife of 12 cm. After the chef's knife, it is probably the most universal knife of the common types, and can also replace a chef's knife in many ways. It is not quite as tall as a chef's knife and is also shorter, making it very easy to handle. It can be used for slicing vegetables and cutting smaller pieces of meat - and it is fantastically good for trimming meat as well as finer cutting tasks in fruit and vegetables.
