Hatsukokoro is a brand from Amagasaki, near Osaka City. They collaborate with various smiths and grinders throughout Japan, developing new series in the pursuit of making some of the finest knives in the world — as well as excellent knives at a lower price point to serve all needs.The Aokitae series is hand-forged in Kyuso, Japan, with a core of Aogami #2 surrounded by soft iron, meaning the knives will develop a patina over time and may rust if not properly cared for.They are finished with a classic kurouchi finish on the upper portion of the blade and a kasumi finish closer to the edge. The grind is excellent — thin behind the edge and with a beautiful distal taper. A great knife.

Maintenance & use

Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.

Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
