Fukube Kaji - ふくべ鍛冶 is a forge from Noto in Ishikawa Prefecture that was established back in 1908 by the first generation Mr. Yusaku Hoshiba. He started as a toolmaker who traveled around in a horse-drawn carriage in Noto to repair and make tools. In 1959, it became a forge that produced tools under its own brand, and now it is 4th Generation Mr. Kentaro Hoshiba who runs the forge, which focuses on traditional Japanese knives.
Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
