Fukube Kaji — ふくべ鍛冶 — is a forge from Noto in Ishikawa Prefecture, founded in 1908 by first-generation Mr. Yusaku Hoshiba. He started as a toolmaker travelling through Noto by horse-drawn cart to repair and make tools. In 1959 it evolved into a forge producing tools under its own brand. Today, 4th generation Mr. Kentaro Hoshiba leads the forge, with a focus on traditional Japanese knives.

Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
