Teruyasu Fujiwara is a trained swordsmith and produces some of the most impressive knives in Japan. He is known for hardening his knives to an exceptionally high level — and they cut like a dream. He was also the first to introduce a "finger notch" in his knives, so that when you pinch the blade, your middle finger rests comfortably inside the notch.The Denka series is built in a 3-layer construction with Aogami Super as the core steel, surrounded by stainless cladding. They are finished with a beautiful tsuchime/kurouchi finish on the upper portion of the blade. The handle is western-style, made from black pakka wood.

The knife must never be washed in a dishwasher, and must not be used to cut hard items such as bones, cartilage, joints, frozen goods or hard cheeses. Remember that thin, hard metal can chip. 

 

Maintenance & use

Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.

Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
