Description & specifications

We are proud to present Foodgear's very own knife range. In collaboration with a knife manufacturer from Koichi, Japan who has over 100 years of experience in the trade, we have had these knives made.

We have had 3 series made by them, each of which has been engraved 'フードギア' which is 'Foodgear' in kanji. The kanji is hand-hammered into each individual knife.

This knife is a 210mm Gyuto made in 3 layers. It has White #1 (Shirogami) in the core and surrounded by 2 stainless outer layers. This means that it is only the egg that will patina over time, and that it is easy to grind up, and has a high potential for sharpness.

The handle is made by Khii Studios, known from Konosuke's knives, and is made of chestnut wood. You will also find Konosuke's kanji burned into the bottom of the handle

Foodgear always advises against cutting all kinds of bones and frozen goods. Knives must not be washed in a dishwasher, as this removes sharpness and provokes rust - even in stainless alloys!

Maintenance & use

Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.

Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
