We are proud to present Daruma Hamono knives. The name "Daruma (達磨)" comes from two characters: "daru達", meaning to reach or achieve, and "ma磨", meaning to polish or refine. Their goal is to create some of the finest hand-sharpened knives to come out of Japan.

The craftsman behind Daruma is Akihiro Kurokawa, who started out restoring knives for one of the shops in Kappabashi. Later he began working for Nigara Hamono in Aomori Prefecture. There he was responsible for, among other things, sharpening their fantastic SG2, Blue Super and VG10 series.

Foodgear always advises against cutting bones or frozen goods. Knives must not be washed in a dishwasher, as this dulls the edge and promotes rust - even in stainless alloys!

Maintenance & use

Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.

Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
