Description & specifications

Hatsukokoro is a brand from Amagasaki near Osaka City. They collaborate with various blacksmiths and sharpeners across Japan, developing new series in an effort to create some of the best knives in the world, as well as very good knives in a lower price range to cater to all different needs.

The Hikari series is made with semi-stainless SLD steel in the core and stainless cladding. Excellent polishing and fit 'n' finish, relatively thin behind the edge, and relatively low maintenance for the semi-stainless alloy.

You can expect a super light, fast 'laser' that cuts well and holds its edge for a long time – the whole package at a reasonable price.

All in all, these can go from an excellent starter knife all the way to a great tool in a professional kitchen.

The knife should never be washed in a dishwasher, must not cut hard items such as bones, cartilage, frozen items, or hard cheeses. Remember that a property of thin, hard metal is that it can break.

Maintenance & use

Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.

Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
