Description & specifications

Yu Kurosaki is a relatively young forge that has taken the knife world by storm in recent years. This incredibly skilled blacksmith is known for his extremely beautiful and functional knives. He is especially known for his Tsuchime finish found on, among others, his Senko series.

Gekko series is hand-forged in 3 layers - VGXEOS in the core and soft stainless steel on the outside.

VGXEOS is a new steel that is very similar to HAP40. It can be hardened hard so the knife stays sharp for a long time, and it is also stainless.

This knife is a so-called utility knife of 15 cm. It is probably the most universal knife of the common types after the chef's knife and can also replace a chef's knife in many ways. It is not quite as tall as a chef's knife and is also shorter, making it very easy to handle. It can be used to chop vegetables and cut smaller pieces of meat - and it is fantastic for trimming meat as well as finer cutting tasks in fruits and vegetables.

The knife, like all other good Japanese knives, should not be machine washed, always wash your knives by hand. The knife cannot cut harder items such as; frozen goods, bones, hard cheeses, nuts, chocolate, etc.

Maintenance & use

Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.

Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
