Razor knife from French Thiers-Issard, made of c135 carbon steel and Snakewood
The company Thiers-Issard dates back to 1884 when Pierre Thiers founded it. Since then, they have specialized in, among other things, classic razors of the highest quality.
All their blades are sharpened and polished by hand, so you can expect the ultimate sharpness straight out of the box. In addition, all the blades are made of carbon steel c135, which is absolutely essential for the adventurous sharpness. As the steel is not stainless, it simply becomes sharper and finer, as the structure inside the steel is denser.
This also requires extra maintenance and you should give the blade a layer of acid-free oil when you put it down.
Size 6/8 is the most common as it is a bit easier to control than the narrower ones. However, the narrower versions can be taken home - write to butik@foodgear.dk if you want to hear about the other models.
