Hatsukokoro is a brand from Amagasaki near Osaka City. They collaborate with various blacksmiths and sharpeners all over Japan, developing new series in an attempt to create some of the best knives in the world, as well as very good knives in a lower price range to cater to all different needs.

Foodgear always advises against cutting any type of bone or frozen goods. Knives should not be washed in a dishwasher, as this removes sharpness and promotes rust attacks - even in stainless alloys!
Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
