Description & specifications

We are proud to be among the first to present Daruma Hamono knives. The name "Daruma (達磨)" comes from two characters: "daru 達", meaning to reach or achieve, and "ma 磨", meaning to polish or refine. Their goal is to create some of the finest, hand-ground knives to come out of Japan.

The craftsman behind Daruma is Akihiro Kurokawa, who started by restoring knives for one of the shops in Kappabashi. Later, he began working for Nigara Hamono in Aomori Prefecture. There, he was, among other things, responsible for grinding their fantastic SG2, Blue Super, and VG10 series.

Foodgear always advises against cutting through any kind of bone or frozen goods. Knives must not be washed in a dishwasher, as this removes sharpness and promotes rust attack - even in stainless alloys!

Maintenance & use

Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.

Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
