Yoshikane Hamono is a relatively small workshop located in Sanjo, Niigata. With over 100 years of experience, this small company has really made a name for itself, making some truly exceptional knives. With Kazuomi Yamamoto at the helm of the workshop, they make some of the best cutting knives in the game.
These 'old-stock' knives are a remnant from an old stock from Yoshikane, which is no longer made. The knives have of course never been used, and have these very characteristic, deep hammer marks, and hand-hammered kanji.
The knife here is a 210mm,. chef's knife in three layers of steel with a core of White #2 also called Shirogami-2. It is thus a fairly 'clean' blade with high potential for sharpness. It is of course also a blade that will patina, because Shirogami-2 is not stainless.
The handle is octagonal and made of walnut and buffalo horn and buffalo horn ferrule.

The knife, like all other good Japanese knives, is not dishwasher safe , and since the blade is not completely stainless, we recommend that you pay close attention to rinsing and drying the blade very quickly after you have cut with it, otherwise it will begin to oxidize.
