Yoshikane Hamono 150 mm Honesuki - Shirogami 2 is an excellent knife from the renowned Japanese workshop Yoshikane, which has over 100 years of experience in creating knives of the highest quality. This Honesuki is designed to deliver precision and sharpness, making it ideal for carving poultry and other tasks in the kitchen. With Kazuomi Yamamoto at the helm of the workshop, each knife is the result of meticulous craftsmanship and tradition.

This knife is made with a core of White #2 steel, an example of their dedication to quality and precision. Furthermore, it is designed to deliver exceptional sharpness and durability, making it an indispensable tool in any kitchen. The blade, made of three layers of steel, offers a 'clean' cutting ability, but requires careful maintenance as it is not stainless. The handle is elegantly designed in walnut with a buffalo horn ferrule, ensuring a comfortable grip and a beautiful aesthetic.

Maintenance and Use

To maintain the quality of the knife, it is not recommended to use a dishwasher. As the blade is not completely stainless, it is important to rinse and dry the knife thoroughly after use to prevent oxidation.

Maintenance & use

Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.

Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
