The handle of this knife is made of desert ironwood (olneya tesota) from Arizona. Among us at Foodgear, it is probably our absolute favorite among wood types. That's because desert ironwood - bois de fer - among the French, has some pretty amazing qualities. First of all, it is very hard, understood in the sense that the wood is dense. It therefore cannot flow, and this also means that it does not absorb liquid. You can't give it oil, and it won't absorb water either. This means that the appearance lasts a very long time compared to softer woods. Desert ironwood is also a type of wood that grows very slowly, which makes the knots in the wood particularly beautiful. Then you must have the absolute most luxurious steak knife you can get, then there is no way around this one.
A Laguiole en Aubrac steak knife has a blade in Swedish 12C27 steel, which is a good stainless alloy. It is sanded to a fine egg from the workshop, and is easy to sand up again when the need arises, which we are happy to help you with.
