Once again a wonder comes from the talented craftsmen of Konosuke.
Konosuke WT is the latest product from the famous manufacturer from Sakai, Japan. It lives up to all the hopes and expectations you could have when you think of a Konosuke knife, and maybe even a little more.
The 225mm Gyuto is made in 3 layers. A core of Shirogami #2 (white 2) being hugged by soft iron. One must therefore expect that the entire blade will patina, but has extremely high potential for sharpness.
Something we think is really cool about this knife is that it has been given a little extra height at the bottom of the heel than you typically see from Konosuke. It gives more 'knuckle clearance' when working with it, and also gives the knife a bit more space to thin out.
What really shines through on this knife, besides the fantastic fit&finish, is the immense grind. It is simply so thin behind the egg that it almost 'falls' through raw materials, and is one of the absolute best performers we have had the pleasure of in the bix.
