From Konosuke, we present a 'package deal' that includes a kiridashi forged by none other than Yoshikazu Tanaka, made from Shirogami #1 and soft iron. Additionally, a natural stone is included in the purchase - in this case, an Ohira.
A kiridashi is a traditional Japanese "craft knife" used for precision work in materials like leather or wood, but nowadays knife enthusiasts like us use them to test new natural stones to see what kind of polish the stone provides, especially when aiming for a kasumi finish.
As a cherry on top, you receive the same natural stone that was used to polish the very kiridashi you receive. The polishing work has been done by 'Ivan The Sharpener' in Kyoto - an extremely skilled sharpener, who is responsible for the polishing of Konosuke's coveted 'Kaiju'.
Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
