The HADO Sumi 240 mm Gyuto is an exceptional knife that combines traditional Japanese craftsmanship with modern design. HADO, based in Sakai, Japan, is known for their exceptional knives, created in collaboration with skilled craftsmen such as Yoshikazu Tanaka and Tadataka Maruyama. This Gyuto knife is built with a core of Shirogami #2 steel, surrounded by soft iron, providing a perfect balance between sharpness and durability.

The beautiful grinding and finishing by Tadataka-san ensures excellent cutting performance, while the rustic kurouchi finish on the top of the blade and the handmade kasumi finish in the middle add a unique aesthetic touch. The handle, made of cherry bark, not only provides an elegant appearance, but also a comfortable grip that makes it a pleasure to work with in the kitchen.

Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
