HADO Knives is a relatively new player in the game, based in the knife capital, Sakai, Japan. They have truly made a mark in the market with their incredibly well-made and sought-after products.
This knife is made with stainless powder steel, SG2 at the core & a stainless cladding. They get the 'raw' blade from Takefu Knife Village, and then it is ground, polished, and finished at Hado's workshop in Sakai.
The grind is really well executed. It is very thin behind the edge and cuts fantastically. Fit & Finish is as we know from Hado - that is, superb. Polished spine and choil, beautiful polishing, and a lovely tsuchime finish on the top of the blade.
